I haven't got the finger food book so not sure about the foods that need to be fried, but if you make your own chicken nuggets they can be grilled or oven cooked. There is a fab recipe (simple too) on here for them from BEAR I think, will try and find it.
You can use the same recipe to make fishfingers in small bite size pieces which can be grilled/oven cooked too, just swap the chiken for fish (I use cod or salmon) with some potato once cooled and mashed together make into any shape you want and add breadcrumbs.
Pasta is a good finger food but not so nice frozen, but you can freeze sauces to add to it, just mix together and let your LO eat with fingers.
HTH will try to think of some more.

quick and easy chicken nuggets
Try this link for the nuggets.

I oven cook rather than fry lots of stuff like fish cakes, meatballs, home made fish fingers, breaded chicken sticks and they work just fine, especially if they are cooked from frozen.

Pancakes make great finger food. I make up a slightly thick pancake batter and fry small thickish pancakes (okay so there is frying here, but I use a non stick pan and find I need to use the tiniest bit of butter for the first batch I make and after that the pan is seasoned enough that I can fry the rest without adding any more fat to the pan). I sometimes add grated or mashed fruit (apples, pear and banana all work well) or cheese or some finely chopped and cooked courgette and peppers to the batter before I cook it. Once the pancakes are cooked I layer them up with baking parchment, place in a zip loc bag and freeze. I defrost them for a few secs in the microwave and they work perfectly every time.

How about AK's sweetcorn fritters which are just pancakes with sweetcorn in (think the recipe is in the fussy eaters book let me know if you want the recipe) Oliver also likes the veggie burgers which I do in the oven. Don't forget that anything really can be finger foods even simple things like toast so you don't always have to cook to give them healthy finger foods. x
