Question Question about using breadcrumbs????

Hi,
I was just reading the other thread about breadcrumbs and I was just curious, what dishes do you use breadcrumbs in??

I have never done that and wondering if I should be introducing more bread in Conor's diet????

Any recipes or ideas would be appreciated.

I use them in patties and burgers and fish cakes and all that sort of thing where they act as a binder/filler.

For making my own fish fingers - I just roll chunks of fish in flour then egg then breadcrumbs and fry in a little oil. I also do the exact same with chicken to make chicken nuggets / chicken fingers. I freeze these uncooked, ready to use. Just fry them on low heat and they cook up brillinatly.

For doing gratin toppings on veg - I just mix together breadcrumbs and cheese,sprinkle over veg and brwon under the grill. Works well with things like cauliflower, tomatoes, creamy leeks.
