i would say jam tarts deffo ok.
birthday cake prob ok too, do you have a recipe, i always do nigella's old fashioned choclate cake and it is so moist it is lovely for days afterwards. the only things i would say poss do on the sat if you could find time would be the cupcakes...could you do them sat morning. just find cupcakes always nicest freshly made IYKWIM. If you can find a choc cake recipe that uses oil instead of butter it will stay moist much longer, like the one lottiesmummy did for us, that was oil and it was very moist!! So then I think it would be fine xx
