Default Cupcake questions?

I am going to make some cupcakes for leo's christening on sunday.

Do you think it was best to make them on saturday rather than tommorrow (friday) for freshness?

How long do you think they stay fresh for?

Has any got any good recipes, tried and tested?

ok here is it, it's scrummy

150g natural yogurt
3 eggs, beaten
1 tsp vanilla extract
175g caster sugar
150g self-raising flour
25g cocoa powder
175g butter, melted

oven 170

mix the yogurt, eggs & vanilla in a bowl
put all the dry ingredients into another bowl
add the yogurt mix & melted butter to the dry mix
give it a good mix up, don't worry if it's lumpy
spoon into cupcake cases and bake for about 20mins

easy peasy and scrummy

if you keep them in a sealed container they should stay fresh for a few days. I have a friends birthday on Sunday and will be baking cupcakes tomorrow.

Bubb82, made your recipe: DH and Rhys loved them!!!! I amde them on Fri with rhys and they are still quite moist today.

Do you think they would freeze ok? Just so the pair of them dont eat the entire batch at one time!
