Question Scones?

Does anyone have a good scone recipe? I'd like to put dried fruit into them.

I used this recipe and they tasted nice, just were a bit dense and that after taste you get when there's too much baking powder? http://www.bbc.co.uk/food/recipes/da...ru_70432.shtml
Also there's def a mistake in the recipe, either too little flour or too much milk. Stupidly I just added all the milk without thinking and it was far too watery to form a dough so I had to add tons more flour! It goes without saying that I'm not a baker!

Oh almost forgot to say I can't get self-raising flour here so need a recipe with plain flour and baking powder. Thanks! xo

I use this recipe from the BBC Good Food website:

It asks for 150ml milk, but I usually only end up using between 100ml & 120ml, you've just got to add it bit by bit until you have enough. I usually make them with glacé cherries or dried cranberries.

mmmmm scones, I'm going to go make some now.

Just a little tip;

If your fruit is a bit too tough soak in boiling water for 15 mins before draining and adding to the mixture, makes it nice and moist! mmm

dont have an actual recipe but some flavours that are good togehter are cherry & white chocolate, cherry and almond essence or all three together. I just guess swap the amount of fruit stated in the recipe for equal amount of any other dry ingredient.

Mum's recipe adapted from Dairy book of home cooking

225g SR flour (book says 1 and a half tsp of baking powder and 225g plain flour as alternative)
50g butter
150ml milk

Mkae breadcrums with flour and butter. Add milk at all once and mix to give a soft, but not sticky dough. Turn out on lightly floured surface and knead quickly until smooth. Roll out to 1cm thick. Using a 6.5cm cutter, cut into 7 or 8 rounds. Transfer to greased sheets and brush tops with more milk. . Bake at 230oC for 7-8mins.

For cheery scones, I usu add 100g chopped glace cherries (I like a lot of fruit in my scones: the book says half this!) and for sultana ones, again 100g of sultanas plus 25g sugar.

Cos of the hassle of making the breadcrumb bit at the start, I usu make double the scones and freeze: they freeze well. I do use a slightly lower temp as I have a fan oven and vary the time depending on what the scones look like. Often I dont need to use all the milk it says. For date scones, I substitute half the flour with wholemeal flour and use 100g chopped dates: you will need to increase the baking powder as the brown flour will be haevier and harder to rise.

Brill thanks Hiann! Sounds like you make scones a lot! Good idea to make a ton to freeze too! I'm on my third week of no chocolate, cakes or biscuits so really wanted something nice to have with my coffee! Just need to get some more butter and will hopefully try them over the weekend! Will let you know how it goes! xo
