Im after a recipe with chicken thighs or drumsticks. I make lots of breas recipes but want something different. We dont eat any piggy products so thats a no no and preferably something i could serve with wedges or jp.
It can be a sauce or just a marinade to cook the chicken in. I found a spanish chicken casserole recipe which sounded ok but didnt seem to have much o the sauce. Thanks in advance |

I love chicken thighs/drumsticks baked on slow heat either in oven bag or tightly covered in foil.
An old Nigella recipe I adapted is baking with a lemon chopped into eighths with bit of white wine, olive oil and lots of garlic cloves in their skins plus some pot wedges chucked in for good measure. Low heat for an hour or more, then take off foil, whack heat up and let it all go crispy (mmmm!). My other fave is: Honey Mustard Chicken 4 chicken thighs, skin on 2tbsp Dijon mustard 2tbsp runny honey Lemon juice (up to whole lemon) Crushed garlic (1 or 2) Heat oven to 160 / Gas 3 Mix up the ingredients and pour over chicken. Let it marinate an hour or longer. Put in cooking bag or cover roasting dish tightly with foil. Cook for about 90mins. Drain off the juices and crisp up chicken on high heat. The juices are to die for. After skimming off the fat, I mixed them with a little bit of sweet chilli sauce for the most yummy intensely flavoured sweet/sour sauce. |

My OH loves this recipe type thing.
Chick thighs Olive oil small squirt of bbq sauce lots of garlic, about 5 cloves salt pepper handful of fresh thyme sprig of fresh rosemary handful fresh oregano or any other herbs you have ( I have these growing in pots) I guess you could use dried but not as much balsamic vinegar You could either blitz the garlic, herbs and seasoning in a blender or use a pestle and mortar. Then add enough olive oil to the herbs so it would coat the chicken (normally quite a large glug), a generous glug of the balsamic and then add a squirt of BBQ sauce, not too much or it emulsifies with the olive oil and it is too thick. Coat the chicken thighs and if you can leave to marinade for an hour or so. Bake them in the oven on about 180 for 15 minutes then turn up to 200 for about another 15 minutes to crisp up. The chicken should look brown and sticky. We serve this with a green salad and crusty bread which is just scrummy dipped in the juice in the pan! It is also good with mash. |

i also like the jamie oliver honey and thyme recipe. you need fresh thyme leafs, honey and chicken thighs or drumsticks.. its sooo easy and really nice. use the thyme leafs as a brush to brush the honey over the chicken bits wil break off whilst doing so and if it doesnt then jus break the leafs up onto chicken after brushing. then cook for 25mins... yum yum enjoy!!!
