Red face Twins who are fussy eaters....HELP!!

Im a stressed mum of twin id boys who will be 3 in January. They were premature and at 13months were diagnosed with cows milk protein intolerance!!! this was a complete nightmare and still is. I have been able to introduce milk products back into their diet now but must monitor it on a daily basis.
From January the dietitian has asked if I can do a 5-6wk of no milk at all just soya based products, I am having enough trouble trying to get them to have a variety of foods now especially finger foods and I am not looking forward to January at all.
I struggle so much to what to give them to eat im getting really stressed

Can they have sheeps milk or only soya based products ? I have a friend whos son cannot have any dairy but can have sheeps milk so I find this to be a great substitute in a lot of dishes that usually call for milk, same with goats and sheeps cheeses.

If they can't have any then you should still be able to substitute soya milk or even almond, rice or coconut milks. All of these can be used to cook with instead of milk in many dishes. Similarly use a dairy free marg instead of butter and there is very little you can't cook For finger foods have you tried making pancakes (with a milk alternative ofc), omlettes, pasta, meat balls, fish cakes, chicken patties - all of these can be made dairy free. There is of course the whole range of fruit and veg to choose from, and for the odd treat dark chocolate is usually dairy free. Baked goods can usually all be made with marg instead of butter so cakes, scones, pastry etc are all fine to make. Muffins are great - sweet or savoury, as they can be made using cooking oil as the fat and a milk alternative or even fruit juice as the liquid.
