You can pretty much use any chicken to make chicken stock. Sometimes I just use whole legs if I see a pack on special offer, or even just wings. I use the cheapest option available. Often when I make chicken stock I do so with the left overs from a roast chicken (I don't season it before roasting because I know I will do this). I just throw the carcass in a pot with water and with or without veggies and simmer away for several hours. It makes a lovely stock.

Hi there, I could not be bothered making all that stock. I found these briliant organic stock cubes... for the amount that is used in the recipes I really dont have the patience so think these are brilliant!!! :

Kallo Organic

They really do the trick as they are so very diluted and I only even use half a cube if needed.

If you want to use stock cubes boots also do a range of great stock cubes for babies. And if you don't have any stock just use plain old water. Stock just adds a bit of extra flavour to dishes. It might be a big deal to us if it is missing in our food but babies are generally experiencing a lot of new flavours from teh others items int he dish that I very much doubt they will miss a bit of stock if it's not there.

I've been using the Kallo stock cubes. 1/5th of a cube per 100ml.
