I started very early on. Once I was cooking with meat I used spices too, but no salt. My son was a big fan of chicken, apricot and sweet potato curry. Just start off using very little and see how you get on.
Don't forget that what you might consider bland is actually going to be very tasty to your little one. Every fruit and veg has a different flavour, combinations introduce more flavours still, and once you start bringing meat, fish etc into the equation the flavours increase even more. Focus on using and veg that are in season to get the maximum flavours.
