We go camping every summer, and Irish summers are none too warm. At night time I just go with layers. Body, babygro/jammies, fleece version of same, sungglesac and blankets. And a hat if it seems particularly cold.
Food wise there is so much you can bring. I assume you will have some sort cooking facilities, if so it's easy to cook up any sort of veg to make finger food or roughly mash with a fork. Pasta is really handy too and makes a good finger food. All you need for those is a pot of boiling water. Fruit don't need cooking ofc. Breakfast cereal is handy too.
