You could blitz it up in the food processor and freeze it ready for making stuffing?

That's what we do if the heels of the bread get left over

My OH makes a kind of savoury bread pudding - same idea as the sweet one but it is made with cheese in it. I can get the recipe off him if you are interested (although he's in bed sick atm so heaven't knows when that will be).

Croutons for sprinking on salads or soups - fry off stale bread in a little olive oil or butter. I like to add some herbed salt to mine.

Could you freeze half of the loaf as soon as it's bought and then defrost to use another day (we do this with sliced pan and it keeps really well that way), or buy smaller loaves (or even bread rolls so that there is less wastage).

If all else fails feed him nothing but sandwiches or toast for dinner for a few days to highlight how much is being left over and how much you have to try and make use of.

IM he's mega fussy with bread, it has to be fresh from the bakers, none of that shop bought stuff

i'm liking the sound of the cheesey bread pudding, would be a good snack food

also found a spanish recipe where you melt milk choc on bread same way as doing cheese on toast then drizzle with olive oil and sprinkle with salt, sounds lush to me

If my OH wanted fresh bread everyday I would make him eat it all, so there was no wastage

The bread and cheese pudding is called Ramequin over here.

250g bread
30g soft butter
200g cheese
1/2 litre milk
4 eggs
salt, pepper, paprika and nutmeg to season

Slice bread into 1cm thick slices.
Butter slices of bread.
Slice the cheese.
Alternate layers of bread and cheese in a greased ovenproof dish.
Whick together the milk, eggs and seasoning and pour over the bread and cheese.
Backe at 200oC for 25-35 mins.

You can also add slices of ham and tomato into the dish.

Have a look on the bbc food website. There are enough variations on the basic bread and butter pudding there to use up an awful lot of left over bread.

Also found a couple of interesing sounding recipes
Bread and lemon curd pudding
Bread and spinach soup
Apple bread pie
