Default I need a blueberry scone recipe!

had some today and they were nice enough but Cara loved them so want to make some!

I've not made blueberry myself, although I have thrown various other fruits into a normal sweet sonce recipe. I usually use

1 lb flour
pinch salt
1oz caster sugar
2tsp baking powder
3oz butter
1 large or 2 small eggs
7 1/2 fl oz milk
2 oz fruit (optional)

Sieve the flour, salt and baking powder into a bowl.
Rub in butter.
Mix in sugar and fruit.
Whisk eggs and milk together and mix in to forma soft dough.
Turn onto floured board, knead lightly and roll out to 1in thick. Cut into scones.
Place on baking sheet, brush with some egg wash (and sprinkle with granulated sugar if you like a crunchy top)
Bake at 250oC for 10-12 mins

I'd just use a standard scone recipe & mix some blueberries in x

this was in my weightwatchers magazine

blueberry and yoghurt scones - 3 pro points per scone

2009 self raising flour
60g low fat spread
60g caster sugar
1 egg
2 tbsp 0% fat greek yoghurt
20 blueberries
1 tbsp skimmed milk for brushing


preheat oven to gas mark 7/220c/fan 200c and line baking sheet with baking paper

put flour in bowl reserve 1tbsp for rolling and rub together with spread until mixture like breadcrumbs stir in sugar

add egg and yoghurt until makes a dough

tip onto floured surface and roll dough to 1cm

cut out 10 rounds with 5cm cutter

make into balls and push 2 blueberries into dough then brush with milk and put onto baking tray

bake in oven for 12mins
