Default dislike of meat

My DS (18 months) will not eat much meat at all, I can get bolognaise into him, or salmon or chicken if I break it up into very small pieces in a Risotto, but if I put meat in any form in slices or chunks on his plate he point blank refuses them.

He will eat fish fingers, but would not eat chicken fingers, seems like anything he has to really chew is a no no. he is not a massive fan of eggs although this week I have managed to get him to eat a small omlette and a bit of french toast.

I am making up his proteins on lentil soups, cheese etc ( I did get some ham into him today in a sandwich by chopping it up small and mixing it with Dairy lea.

My main concern is how to get him eating more meat proteins, without it becoming a battle ground over what he has to eat, I dont want to create an issue with meal times when it is just meat that is a problem. And is it ok for an 18 month old not to want chewy foods, will it affect his speach muscles?

any ideas welcome
