Default what to do with a butternut squash

hi anyone got any suggestions please - i made AK's butternut squash risotto doubling up the amounts but still have 3/4 of a butternut squash left.

what can i do with it in a recipe suitable for a toddler and/or a 10month old.

did a search not found much but may not have searched properly.

i've left it out on worktop covered in foil but it seems to be oozing a sticky liquid only bought it saturday.

don't want to waste it.

I roast it in chunks & my boys love it or I mash it with potato & put it on cottage pie or cube it & put it in casserole.

Oliver loves this steamed as a snack I just cut it into cubes. I make butternut squash mash to & top shepherds pies / fish pies etc x

you could steam it and mash it up with butter - mixes well with other veg too, to make a veg-mash combo (sweet potato/ carrot)

you could roast it in the oven in chunks - good with maple syrup on for roasting as then it caramelises a bit.

I do a tray roast of butternut squash, sweet potato and carrot - sort of an orange veg medley. As it cooks slowly in the oven, you don't need to peel it either!

if you are making a beef or lamb (red meat) casserole then it is nice to throw in chunks too

works nicely in mild curry dishes too with a creamy coconut milk sauce

simmer it in stock with some onion for soup

I've never tried it personally, but I have a cousin in California who has baked it in a cake! Think you steam and mash it first. I don't have a recipe but bet you could google it.

I've made a pumpkin pie and a pumpkin bread (like carrot cake) with butternut before. You steam or bake it for the pie, then mash and it's basically mixed with sugar, cream, eggs and some spices (cinnamon I think) then baked in a pastry shell. It was used grated in the bread.

I use them just like any other root veg so steamed, baked, mashed, in soup, in stews or curries.

think i will mash and freeze it for another time and mix with veg for meals for ds as quickest or cube and steam and freeze and use for finger food - ds has a raging temp today and i couldn't do much. he spent the day in only his nappy poor little love. and a bib he kept dribbling so much. thanks

ah thank yo matilda's mum he's better this afternoon but not sure the butterbut squash is looking too bright.

but i do always appreciate all the suggestions for next time i buy one.
