Default Coleslaw recipe

Hi,

Just wondered if anyone has a nice homemade coleslaw recipe please?

All I ever do for mine is finely chop some white cabbage, coarsely grate carrot, mix with dressing and it's done. Sometimes I add finely chopped onion if I feel like it. For the dressing I use a mix of half mayo (hellmans) and half french dressing (my own).

For the french dressing I blitz the following all together:
300ml sunflower or rapeseed oil
100ml vinegar (white or red wine or cider)
1 cherry tomato or a piece of a normal tomato
1-2 cloves garlic
1 v. small onion or shallot
5-6 peppercorns (or some ground black pepper)
pinch salt
large pinch sugar
1/2 tsp mustard powder (or grainy mustard if I'm out of powder)

if you want mega easy just grate white cabbage and carrot and mix with mayo and black pepper, it is v yummy and super super easy.

I think you can basically use any dressing you like for coleslaw, go with whatever is your favourite. I find mayo on it's own a bit too heavy, that's why I use the french dressing to lighten it a bit for coleslaw.

The french dressing is my absolute favourite green salad dressing so I always have it in the fridge, and the quantities I've given here are for a batch of dressing and not what you need for the coleslaw (just in case of confusion). It'll keep really well for several weeks but it will need a good shake before you use it as it can seperate and if your fridge is really cold it can sometimes go a bit thick and gloopy (depending on which oil you use and how the oil reacts to cold).

When making coleslaw I just mix up what I think is enough for the quantities of cabbage and carrot that I have.
