Default Batch cooking?

Ladies,

I've been really slack lately with my home cooking and I need to pull my finger out and get back on track.

I need some inspiration on meals to cook that I can batch cook and freeze. If i'm honest the only meals I tend to batch cook is things like spag bol and curries.

What meals do you purposely cook in surplus to freeze? I need some ideas for those days when meals are needed in a hurry!

What about burgers, pasta sauces, fishcakes, chilli con carne. Just trying to think what's in my freezer for emergencies!

some veg - braised red cabbage, ratatouille (sp)

I batch cook

Veggie burgers
Normal burgers
Chicken nuggets
any type of casserole so chicken / beef / lamb and I mainly use the recipes out of JO ministry of food for my casseroles
Curries
Spag bol
Pasta bake dishes
Chilli con carne
Shepherds pie
I also make fajita fillings up & freeze them for quick dinners when we are out all day

Im sure there is plenty more but will keep on thinking. I batch cooked yesterday as we just got back from holiday and it was sooo cold out and we desperately need home cooked food after eating out so much. x

I freeze the same as everyone else, i'm just sat here now as we had the last of the Chilli from the freezer today so need to write a menu plan for this week and cook extra for the freezer

Yep I pretty much do the same as everyone else and also make up small pots of mash and my HM tomato sauce so I can always have those for standby things for Finlay as well as the usual store cupboard/freezer stuff, so pasta with tom sauce and cheese or fish fingers and mash for example xx

yep same here. Also make a big pot of soup or Irish stew once a week and we have it for dinner or lunch then the rest is frozen for lunches or quick dinner.

Im also gonna start batch baking now that I have Wednesday free I can do breads, teabreads, buns etc and lift out when needed.

Also wanted to add that when you make any regular meal, always steal at least one portion and freeze right away. That way you always have at least a few portions of something in the freezer.
