Question leftover roast chicken

what do you normally do with yours?

i normally do a pasta bake with it but that's getting a bit boring what else can i do with it?

I do a sort of fry up which my mum called danish left over slightly un healthy but yummy.

Left over potoaotes or par boiled potoes with skins on.
Left over cooked chicken
1 onion finally chopped
1 mushroom finally chopped.
Any left over veg
1 egg per persoon.
Cooked beetroot (optional)

Place the onions and mushrooms in a large frying pan. Fry untill soft
Add the potatoes and fry untill soft in thr centre but rispy on the outside.
Add the cook chicken and veg if using. Fry untill warm.
Serve with a fried egg on top and beetroot on the side.

We often do:

-Curry
-fajitas
-Soup (Leek and potato with left over roast chicken is delish!)
-Sandwiches/chicken salad
-Mini chicken pies???
-Pizza topping

If we have leftovers we usually just have it cold with chips or similar, or use it for sarnies type thing.

JO does a recipe (maybe in Jamie's Dinners?) with leftover chicken/turkey in a pie, think it's with leeks.

Could also do something with Campbell's condensed mushroom soup and some rice!?!?!

If it's only leg and wing meat then I leave it on the carcass, throw the whole thing into a pan with any juices from the raosting tin and simmer for about 5 hours. I strain off the stock, take all the meat off the bones and use the stock and meat to make soups. Makes lovely cream of chicken soup, chicken and veg soup, chicken noodle soup, chicken and sweetcorn - there are loads of options. I just make up whatever soup it is with the stock and throw in the meat for the last couple of minutes.

We do it with Jackets/salad, sarnies, curry, casserole or soup.

I make some rice. In the meantime in a saute pan I saute the chicken pieces, then I add in the rice, sometimes a can of corn or you can also add mushrooms. I also sometimes slice an omelette into thin strips and add that in-so kinda like a chinese rice.

i just use it as i would any other chicken so curries, pasta, casseroles, soup...
