Sandwiches
Salads If it's only leg and wing meat then I leave it on the carcass, throw the whole thing into a pan with any juices from the raosting tin and simmer for about 5 hours. I strain off the stock, take all the meat off the bones and use the stock and meat to make soups. Makes lovely cream of chicken soup, chicken and veg soup, chicken noodle soup, chicken and sweetcorn - there are loads of options. I just make up whatever soup it is with the stock and throw in the meat for the last couple of minutes. |

I make some rice. In the meantime in a saute pan I saute the chicken pieces, then I add in the rice, sometimes a can of corn or you can also add mushrooms. I also sometimes slice an omelette into thin strips and add that in-so kinda like a chinese rice.
