I made the vanilla cupcakes and really enjoyed them. I used an electric whisk but didn't mix for as long as the book says as I think the bicarb/baking powder has a time limit on it personally. I just got it til it was combined.

Am making some for an Easter Fair on Saturday so hopefully they turn out ok!

I made the strawberry cheesecake cupcakes, they were so yummy

They all were eaten that evening wow !!!

i made the brooklyn blackout cake yesterday. OH MY GOD its gorgeous. too many syns for my liking (26 syns per slice for anyone doin s.w) but its amazing

I did the choc cupcakes with the choc icing, using the AK children icing set. My LO had the best fun ever, but I couldn't believe the places I found the icing. Oh, and a full clothing change for LO too!

I Love this book too!! I have tried the Brooklyn Black out cake, a few times and have got great results! Although my only concern is every time I make it the sponge seems a bit dry! It’s only after I have left it for a day and the chocolate layers in between the cake and the chocolate icing on the outside has seeped into the side of the cake a bit, that it gets moister and more fudgy and delicious!! But the next time I make it I will make it with buttermilk instead of milk, and maybe 200ml instead of 160ml.
