Tam will be the best one to tell you what to do, as her Nate has a serious egg allergy. My son has a dairy allergy, but from what I gleaned at the local allergy clinic, our pediatric allergist would probably advise skin prick tests for egg and some other common allergens. Depending on the results, he'd probably introduce egg while under medical supervision. That's what they do for the babies with dairy allergies who actually go anaphalactic (I'm sure I spelled that wrong). They admit them to the hospital and give them building "doses" of the allergy food until they are sure that there is no major reaction. I imagine it would be the same for egg. I wouldn't re-introduce it without med supervision, given your George's strong reaction. I hope that helps!
Sorry, one more thing: Since my lo is sort of generally allergic, they had me take it slow with eggs (still haven't given him straight egg), what the dietician said was start with things that contain a bit of egg (I found some teething biscuits, for example), then move on to more egg content (we then did egg pasta, and then eggy bread/french toast). Dietician explained that egg can be a "threshold" allergy, where a little is OK, but a lot of egg prompts a reaction... But, again, I wouldn't do this with your lo unless you're in a hospital setting.
