Alternative Mug cake - Easy WW recipe
I made this ages ago in my best Denby mugs and was scrummy.
Makes four cakes, 240 cals per serving 4.5 WW points per serving without sauce (The sauce is delish though so stuff WW)
Ingredients:
Sunflower oil spray
60g low fat spread
60g caster sugar
1 medium egg
100g self raising flour
1 small lemon (grated zest and 2 tablespoons of juice used)
4 heaped teaspoons lemon curd
Method:
Preheat oven to 180 and spray oil into mugs
For cakes
Beat marg, sugar, egg, flour, lemon zest and 1 tbs lemon juice with electric whisk for a couple of minutes. Divide mixture between four mugs and bake for 15 minutes.
For sauce
Stir lemon curd, other tbs lemon juice and 1 tbs water together in a small saucepan and heat gently.
Turn puddings out of mugs and serve with sauce drizzled over.
