Oooh dear, I've been farting enough after my tomato & lentil soup, I think my village would be declared an industrial no go zone if I ate cabbage soup!

I made potato and leek soup the other night is lovely and very simple.

All i did was fryed one finely chopped leek with 1 chopped onion in butter ( this could be changed to oil a tiny bit) then added about 200g thinly sliced pots (peeled first ) along with 1pt of chicken stock. Simmered for 20 mins seasoned and blended. i love it.

I am gonna make soup today with onion, carrot and leek cooked in chicken stock (though veggies could of course use a vegetable stock instead).

gently fry a chopped up onion in olive oil until soft but not browned then add the carrot and leek (however much you fancy) - chopped as big or small as you like, but all similarly sized.

fry for a few mins then add the chicken stock and bring up to the boil.

turn down to a simmer and cook until the vegetables are just soft (hard to say how long as depends how small you chop - give it a taste now and again until as you like it!)

turn off heat and leave to cool down, then put half the soup in a blender and whizz up until thick. return it to the pan with the thinner lumpy soup and stir to combine - gets a really lovely consistency and you can still then see some of the chunky veg too.

I've just made a yummy minted pea soup - really easy. Makes quite a lot so you could freeze it.

I large onion
1 750g bag of frozen peas
Small knob of butter
1 tbspoon of olive oil
1 lt of chicken or veg stock
few chopped sprigs of mint

Sweat the onion off in the butter and oil for about 10 minutes until soft and translucent. Add peas and stirs for a minute then pour in the stock, bring to the boil and then have it on a fast simmer for 10 minutes.

Allow to cool and then blitz in a blender.

When you are ready to eat add some chopped mint and maybe if your diet allows a teaspoon of cream or creme fraiche and reheat. S & P to taste.

I like a minty pea soup like this with the juice of a lime in too. Very yummy.

The spicy red lentil soup is excellent. Needed to do a couple of modifications based on what was in the cupboard, but what a great soup! Thanks for the recipe hiann!

Made this for me lunch. Also have some peppers roasting in the oven for a quiche. I might chop a couple of bits up and add it to the soup when I'm about to eat it.

300ml boiling water from the kettle
1/2 a chicken stock cube
2 heaped tbsp frozen peas
30g rice noodles

In the morning, snap the noodles into small pieces straight into a vacuum flask. Add the peas. Dissolve the stock in the water then pour in. Seal the flask. By lunchtime the noodles will be soft and peas cooked. You can also just simmer everything for 3 mins on the hob.
