Good idea. We'll probably be eating our usual meals as they are fairly healthy, I'll just be having less than the amounts I've been scranning down lately! But I will be happily looking for ideas

I oftem get lazy and use Tilly's whole milk in my coffee or on my cereal, but am gonna be strict and always make sure we have fresh skimmed milk in the fridge.
I don't take sugar in coffee (and don't drink tea) but using skimmed milk - or drinking it black, and cutting down or cutting out sugar is one step in the right direction. I have also cut out fizzy drinks - other than carbonated water, and am gonna cut down my squash drinking too - gonna try to drink lots of water... I also read somewhere that using sweeteners makes your brain think that sweet stuff is not heavily calorific, so that whne you have rela sugar, it processes it differently and can be really bad for you (don't know if this is true). ... which reminds me, drinking a glass of water before a meal apparently helps you to eat less. here is one of the recipes from 'Cook yourself thin' which I am gonna have for my lunch:
mackerel and watercress dip with pitta crisps: ingredients: 2 wholemeal pitta bread 100g smoked mackerel fillets (peppered ones if you fancy) 15g watercress leaves only, stalks removed half tsp mustard 50g light cream cheese 35g low fat natural yoghurt a pinch of powdered or a grating of whole nutmeg half-to-full tsp of lemon juice (to your own taste) salt (optional) more watercress to garnish method: preheat oven to 200 degrees C/ fan 180 degrees C split each pitta in to two, then cut into 'tortilla chip' shaped triangles, place on baking tray and bake in the oven for 8-10 mins until crisp. meanwhile, put the mackerel, watercress, mustard, cream cheese, yoghurt, nutmeg and lemon juice into a blender and whizz until combined. You can leave it textured if you like or whizz until smooth if you prefer. season with the salt if you are using it. serve the dip garnished with the watercress and will the chips on the side. NOTE: once made, the dip will keep in the fridge, covered, for 2 to 3 days. will let you know how it taste later on xx |

That sounds yum! Reminds me of sardine pate I used to make which would be healthy too - mash a can of sardines with cream cheese (light of course
), some horseradish sauce, lemon juice and chopped parsley. Very delish!I had a lurverly pud last night cos had plenty cals left over and was peckish. Chocolate Pud 250ml skimmed milk 1 tbsp cornflour 2 tsp cocoa powder 1 tbsp sugar (I suppose you could use sweetner if you prefer) 1 tsp vanilla (you can do without this if you find you have none left - like I did last night )Mix the cornflour and cocoa powder with a splash of the milk in a cold saucepan. Stir in the rest and bring to a bubble, stirring. Cook for a couple of minutes until nice and thick. I s'pose it would probs serve two but was just right for my late night, warming munchies. |

I just ate some of the mackerel dip and it is YUMMY! Is nicer once has been in the fridge for a bit as gets thicker once cold. I ate it while my pitta chips were still warm. could eat more, but might have to refrain and have a healthy pud instead! xx |
