Default Lunch ideas on extra easy (SW)

As the title suggests really please. I use my HEB on my breakfast so can't have that at lunch and I'm really struggling for ideas apart from salad

I was having loads of salads and got bored of that too!!! What about

- jacket potato with beans or low fat cottage cheese and a salad on the side.

- pasta with onions, peppers, courgette, garlic, tuna or chicken, cheese (HE A) and a bit of extra light mayo or low fat creme fraiche or you could use low fat salad dressing. You can use anything that you have in the fridge really. Handy to make up the night before and take to work with you in a box!

- Cous cous with mixed veg and meat like above. My consultant got one of those packets of flavoured cous cous that you just add water too and I think it was just half a syn.

Many of the ideas have been mentioned. Today I had a jacket potato with beans and then had big bowl of fresh fruit salad as my "3rd".

I also enjoy taglitelli with courgettes and onions with a low fat creme fraiche with a tblsp of pesto (this is 4 syns but makes a big batch of 2-3 portions)

ratatouie (sp?)

slimming world quiche - yummy and easy to make

ido lots of versions of slimming world quiche/pie.

red day version.......

pack of bacon cut into strips
4 morrisons eat smart cumberland sausages (2 syns)
mushrooms
onion. (red or white or spring whichever you have)
peppers (whatever colour you have )
4 eggs
quark or cottage cheese (any syn free version)


chop everything up, fry off in a large pan. till just softened.
pour into a quiche tin or suitable baking tin.
spread out so its all evenly distibuted.
mix eggs and quark/cottage cheese.
season really well with lots of pepper bit of salt.
pour over the veg/meat and bake in the oven 20 mins.

2 syns for the lot or share if you have to lol



green day version.....

cooked new potatoes
pepper
onion
celery
asparagus
any veggies you like or have in the fridge...
3 eggs
quark or cottage cheese

make as above



extra easy day version...

bacon
4 morrisons eat smart sausages
cooked new potatoes
onion
pepper
any veggies you like
3 eggs
quark/cottage cheese

cook as above



if you have a A choice left, grate 28g cheddar or 42g half fat cheddar on the top. or put that on the top and count 6 syns

what about Rice salad

cook some rice,
chop up some veg. (tomato pepper onion peas sweetcorn cucumber etc)
whack it all together with abit of worcester sauce or soy sauce. yummy.

i also have a couple of slices of ham or turkey with it, so that'd make it an extra easy dinner

some easy meals i love (and my kids too):
1. stir-fry veg with tofu cubes (soak the tofu in Soy sauce for a few hours if you can before cooking) קייטרינג
2. rice with lentils- very healthy and very filling, so you won't eat too much
3. fruit salad with granola

hey make some non-veg momos as snacks with cold drink.
have chicken with chapati
and at last ice cream.
Perfect dinner this will be.
