Hi all.... I'd love to share these recipes with you - great for breakfasts and snacks!
1. Butternut squash muffins/ buns 100g butternut squash 100g sugar 1 egg pinch salt 75g plain flour 0.5 heap tsp of baking powder 1/4 tsp ground cinnamon 45mls olive oil Pre-heat oven to 180C Add squash to food processor and mince up as small as it'll go. Add all the other ingredients and whizz up again until all mixed up. Divide into cake cases and bake for 20mins until golden brown and cooked through. This makes enough for 12 mini-muffins or 6 normal sized buns. The first time i made this i added the full amount of sugar... they were quite sticky and maybe a bit too sweet for los - my son loved it!! This time however i just added 50g of sugar and they're just as nice... just less sweet and a little less moist. Alternative would be use brown sugar instead. 2. Banana Muffins I've tried to adapt the recipe as well for banana muffins.... I used the following: approx 100 - 150g ripe spotty bananas 1 heap tbsp sugar 1 egg 75g plain flour 0.5 heap tsp baking powder 45mls olive oil instructions as above.... these have a bit more of a bread-like consistancy but i've just had 3 with a cup of coffee and they were nice! 3. Appley Pancakes 1 Cup of pancake mix 1 egg 1 tbsp Sugar (optional dep on how sweet the apple sauce is) 0.5 cup apple sauce a little water if needed Mix all ingredients together and cook in a dry non-stick frying pan.
