AK chicken nuggets: substitution suggestions
Hi,
I am wanting to make AK's chicken nuggets (recipe on this website), anyone have an idea what non-dairy item I should substitute for hte buttermilk in the marinade? I thought oil, but then that might keep the coating from sticking... and I think soymilk or ricemilk would be just gross (and not thick enough, either)

No idea really but I'll post my ten cents anyway: when I do chicken nuggets I dont usu marinade the chicken so its not an essential part: may make the chicken more moist.
I dont see why you couldnt use rice or soya milk and just keep basting the chicken althought this shouldnt be necessary if you use a bowl rather than a casserole dish as it'll be deeper and cover more of the chicken.

I don't know the recipe but I found that if you marinate the chicken in oil with a drop of black pepper and a drop of lemon juice they taste good.

when I do Bear's chicken nuggests I dont use anything to as a baste, I find that the chicken is moist enough and the breadcrumbs stick anyway!

Well, I ended up doing the marinade with no buttermilk and just some olive oil, along with the lemon, worcestershire, soy sauce and paprika (the recipe is on this site, under everyday meals for 1-4 year olds). funny thing was that I was just about to make them and had already made the seasoned crumbs and had marinated the chicken when I realized we are out of eggs. So I ended up going straight from marinade to crumbs, skipped the seasoned flour and the egg wash. It was all fine, as I oven baked them, coating mostly stayed on, but some came off while transferring to the plates. Myles loved them, he ate three whole chicken strips/tenders, probably the equivalent of a chicken breast! I found them a bit too lemony (but I'm sure I used more lemon than the recipe called for... also used more paprika).

I buy my daughter a dairy free and soya free butter replacement called vitalite which I use in all my baking. Even started using it all the food for everyone so that my daughter doesn't get given dairy products my accident by anyone else caring for my children.
