Default Dairy & Egg Free Pancakes

Hi all - I just wanted to share how I make pancakes for my son. I am in the US so not sure pancakes are breakfast food in the UK!

I use Bisquick pan cake mix - not sure what you have in the UK. It is dairy and egg free. Instead of egg I use either applesauce or an egg replacement that I found in a health food store. I use Vanilla Soy Milk and it gives the pancakes a nice hint of vanilla. Sometimes I add very finely grated carrot to the mix as well just to get some veggies into him.

I make a huge batch and freeze the pancakes separately. Just wanted to share!

BTW- you can also freeze the batter in an empty cola bottle. Don't fill it all the way (expands in the freezer). When you want to use it defrost and shake and pour. (It's also easy to use a bottle to make pancakes (just pour them into pan).

Also if you freeze the made pancakes on a baking tray, when they are frozen you can put them into a freezer ziplock bag and they won't stick together cause they are already frozen.
