My son is allergic to dairy, but not soya. He has had the skin tests. He doesnt have an egg allergy but they told me not to give him eggs just incase it develops into an allergy. often it goes hand in hand with a dairy allergy.
He goes back for more tests in July. I think he might be allergic to a few more things too (so i will be asking for them to test him more)I'm still bfing my son, he has been given SMA wysoy but he doesn't like it very much, and won't drink it. |

Well here are 3 of my daughters favourite recipes which are diary free 1 is a dip, 1 is a oat cookie and the other is a basic scone recipe. You can add things to all 3 recipes to make them into different types of things but so far I have only done a salmon dip and a cheese, tomatoe and onion dip and a cheese and herb scone. So here we go with these recipes I will add more once I have tried and tested them on fussy eater as so far if she likes any of the recipes other children that try her food also enjoy the recipes.
Basic scone makes at least 6 depending on the size scone cutter you us: Seive 200g self rasing flour into a mixing bowl and add 50g dairy alternative butter and rub together until it resembles bread-crumbles add 125 soya or other diary alternative milk to the bread-crumble mixture gradual and stir to form a soft dough, gentle roll out the dough so it is 2cm thick and cut out with your desired cutter, collect all dough trimmings together and reroll out until you have used all the dough, brash the scones with a little soya or other dairy alternative milk and bake for 10-12 mins on gas mark 7, 220c until the scones have risen and turned golden. If you are using the hob the cook the scones roll them until they are around 1.5cm thick and do not brush with milk. Heat the griddle pan or frying pan over a medium heat, place the scones in the pan and cook for 4 minutes use a palette knife or fish slice to turn them over and cook for another 4 minutes. Make sure the pan is not too hot otherwise they will burn before they cook. If you make the scones sweet add 50g dried fruit and 25g sugar or 1 medium banana mashed and you will require less milk if using a banana instead of sugar. If you make the scones savory add for example 50g soya or dairy alternative cheese and 1tsp mixed herbs or 50g soya or dairy alternative cheese, 25g olives, 25g sun-dried tomatoes/peppers and a quater of a teaspoon dried herbs. Basic dairy free soft cheese dip serves 2-4: Spoon 100g soya or dairy alternartive soft cheese into a bowl, cut a lemon into half and squeeze one of the lemon and add to the soft cheese, add 1-2 10ml spoonfuls of soya or other dairy alternative yoghurt in to the cheese and lemon and mix together thoroughly. transfer into serving bowl and serve with your favourite chopped raw vegatables or pitta bread. You can also add things like a 100g tin of fish like salmon, tuna, sardines, pilchards or mackerel. You you could add some chopped parsley or dill or a 15 ml sppon of tomatoe puree and onion. Oat cookie makes at least 12 depnding on what size cutter you use Heat 100g soya butter or other dairy alternative butter, 25g light muscovado sugar, and 2 15ml spoons of clear honey in a saurce pan and stir until melted. If you have a microwave, place in a microwavable bowl and heat on high for 1 minute, stir in 100g slef raising flour, 100g oats, a quarter of a 5ml spoon mixed spices and 50g raisins, mix well and allow to cool for 5 minutes. Roll out on a floured surface until about 1.5cm thick and cut out with your choosen cutter gather together all trimmings and roll out again until you have no dough left and place onto a prepared baking sheet and space them well apart. Flatten the tops slightly with a fork and bake for 15 minutes on gas mark 3, 170c until golden brown and crisp on the base. Leave to cool on a wire rack. You could also try using other dried fruits instead of raisin's like cranberries, dates, apriocots or other dried fruits for a different taste to the cookies. Dairy free speedy pan pizza. Not sure of servings as only did this pizza once for a party so was cut into very small bite-sized pieces
Ingredients: 225g/8oz self rasing flour 1 tsp dried basil 5 tbsp olive/vegetable/sunflower oil 2 tbsp tomatoe puree 150g/5oz dairy free easy melt mozzarella style cheese Any choose of toppings if you don't want plan cheese and tomatoe pizza Method: 1) Place the flour and basil in a bowl and make a well in the centre, add 3 tbsp oil and about 6 tbsp water, stir with a round bladed knife until the mixture makes large crumbs then bring together to make a dough, adding more water if necessary. 2) Knead lightly, then roll into a round to fit the base of a 25cm/10inch frying pan. 3) Heat 1 tbsp oil in the pan, place the dough in the pan and cook over a moderate heat for 5 min's, turn the pizza out onto an oiled plate, heat 1 tbsp oil in the pan and cook the reverse side of the pizza for 5 minutes. 4) Meanwhile spread the tomatoe puree over the pizza and sprinkle on half the cheese, arrange you choosen toppings and finish with the herbs and remaining cheese. 5) When the underside is cooked, place the frying pan under a pre-heated grill and cook for about 3 minutes until the cheese is melted and toppings are heated. |
