Default Eggless fish/vegi patties - need recipe

if anyone can help, finger food for LO, I was thinking tuna with vegies but I need some guidance re: what to put in and how much to make it edible !

If you are doing tuna then here is a recipie for egg less mayonaise so you can still tuna mayou sandwhichs

Diet No Egg Mayonnaise
4 pkgs. sweetener
1/4 tsp. paprika
1 tsp. dry mustard
3/4 tsp. salt
1/2 c. evaporated skim milk
(undiluted)
2 1/2 tbsp. vinegar
1 c. corn or safflower oil (more or
less)
Combine first five ingredients in blender on whip. Add vinegar then add oil in a slow stream, until mixture thickens and forms a smooth, thick mixture. Put in a clean container and refrigerate.

# Ingredients
chicken tenders or cut up chicken breast
onion
garlic
red bell pepper
oil
1 tsp chili powder
1/4 tsp ground cumin
1 tsp salt
1 can corn, drained (optional)
1 can black beans, rinsed & drained (optional)
1 lime
# Instructions
Saute chopped onion, garlic, and red pepper a few minutes in vegetable oil. Add chicken tenders or cut up chicken breast chunks. Saute until chicken is almost done, then add chili powder, ground cumin, and salt. Stir and simmer a few minutes.

If using, add drained corn and black beans.

Squeeze fresh lime juice and serve.
