you could steam it and mash it up with butter - mixes well with other veg too, to make a veg-mash combo (sweet potato/ carrot)
you could roast it in the oven in chunks - good with maple syrup on for roasting as then it caramelises a bit.
I do a tray roast of butternut squash, sweet potato and carrot - sort of an orange veg medley. As it cooks slowly in the oven, you don't need to peel it either!
if you are making a beef or lamb (red meat) casserole then it is nice to throw in chunks too
works nicely in mild curry dishes too with a creamy coconut milk sauce
simmer it in stock with some onion for soup
I've never tried it personally, but I have a cousin in California who has baked it in a cake!


Think you steam and mash it first. I don't have a recipe but bet you could google it.
