fruit cake is easy, use the same recipe as a christmas cake, but make it now so its had a good few weeks to mature. makes cutting it easier.
yes i fill the inside, jam and buttercream. then also put a smear of buttercream over the outside of the cake. its like a glue then, to hold the icing on. ill find my recipe and send it to you
i use regal icing, its ready made from my local cake deco shop
most places sell it. ive also used asda's ready made icing, it tastes fine just abit softer and stickier when kneading
