i buy ready made icing, its easier and cheaper. i have made my own but its time consuming. Im very lucky coz i have a fantastic shop near me that sells everything i need.
where abouts in the country are you? (just wondered if your local to me, i live in leicestershire)
only tips i have are : for carving cakes use a good firm madiera cake. try a few recipes and you'l soon find your favourite.
find a make of icing you like. theres a few diffferent makes out there, so try a few and find your favourite.
hope this helps chick.

Well thanks emma, i really would like to give making a cake a go. Leo's christening is coming up. I might have to cheat and buy a fruit one but would give a sponge one ago.

Which recipe do you use for a good firm madiera cake ?
Do you fill the inside?

Which make of icing do you use?
Thank you
