Default Fruit lamb

I had a piece of lamb I wanted to cook for Freddie but was a bit stuck for somethign different to do. Took inspiration from a few different recipes and came up with this. The result was a nice sticky fruity stew thathe really enjoyed. The quantities made enough for 3-4 servings for him (with rice or mash) - should be easy enough to scale up. One word of warning though if the heat is too high and if it's not stirred fairly frequently it could burn fairly easily.

Ingredients
150g stewing lamb
1 dsp flour (not heaped)
1tsp cinnamon
1 large pinch paprika
1dsp oil
1 small onion, peeled and finely chopped
10 dried apricots, finely chopped
5 large dried dates, destoned and finely chopped
1 small (230g) tin tomatoes roughly chopped if whole

Method
Mix the flour and spices together.
Cut lamb into cubes and toss in the seasoned flour.
Heat the oil in the pan and brown off the lamb.
Reduce the heat, add the onion and fry for a further 1-2 mins.
Add any flour remaining and fry for 1 min.
Add all the remaining ingredients along with 1 tin of water (i.e. the tin the tomatoes were in)
Simmer on very low heat for 1 hour or till the lamb is cooked. It needs frequent stirring to make sure it doesn’t stick. If it gets too thick add some more water.
