Personally, I would experiment with cornflour and skimmed milk (just use the amount of cornflour recommended to make white sauce with full fat milk). Alternatively, you could look at no fat yoghurt, low fat creme fraiche etc.

I made lasagne the other night and put a layer of grated courgette in the middle which worked quite well. This would lower fat content as well as all the other tricks.
