Dairy free speedy pan pizza. Not sure of servings as only did this pizza once for a party so was cut into very small bite-sized pieces
Ingredients:
225g/8oz self rasing flour
1 tsp dried basil
5 tbsp olive/vegetable/sunflower oil
2 tbsp tomatoe puree
150g/5oz dairy free easy melt mozzarella style cheese
Any choose of toppings if you don't want plan cheese and tomatoe pizza
Method:
1) Place the flour and basil in a bowl and make a well in the centre, add 3 tbsp oil and about 6 tbsp water, stir with a round bladed knife until the mixture makes large crumbs then bring together to make a dough, adding more water if necessary.
2) Knead lightly, then roll into a round to fit the base of a 25cm/10inch frying pan.
3) Heat 1 tbsp oil in the pan, place the dough in the pan and cook over a moderate heat for 5 min's, turn the pizza out onto an oiled plate, heat 1 tbsp oil in the pan and cook the reverse side of the pizza for 5 minutes.
4) Meanwhile spread the tomatoe puree over the pizza and sprinkle on half the cheese, arrange you choosen toppings and finish with the herbs and remaining cheese.
5) When the underside is cooked, place the frying pan under a pre-heated grill and cook for about 3 minutes until the cheese is melted and toppings are heated.
