Freezable Meal - Thai Chicken Soup


Life becomes very demanding and tiring when you are a new mum so it’s a good idea to think ahead and prepare some meals to put away in the freezer. That way you'll have a handy supply of nutritious, freezable meal during those hectic first days with your baby.

This easy to prepare soup is ready in about 10 minutes and is almost a meal in itself.

 

New Mum - Thai Soup

 

 

 

Ingredients

1 tbsp light olive oil
150g (5 oz) chopped onion
1 clove garlic, crushed
½ red chilli, finely chopped (approx 1 tbsp)
1 chicken breast fillet cut into thin strips
100g (4 oz) broccoli
600ml (1 pint) chicken stock
300ml (1/2 pint) coconut milk
salt and pepper
150g (5 oz) cooked rice (40g/ 1 ½ oz uncooked weight)

  

Method:

Heat the oil in a pan and sauté the onion, garlic and chilli for 2 minutes.  Add the strips of chicken and sauté for 2 minutes more.  Cut the broccoli into small florets.  Add the broccoli and chicken stock, bring to the boil and simmer for 4 minutes. Stir in the coconut milk and simmer for 2 minutes.  Season to taste and stir in the cooked rice.
