The mince pie recipe makes miniature versions of traditional children’s favourites look really appealing and watch out because adults will want these too!  This mini mince pie recipe is delicious and have a surprise marzipan filling.

Mince Pie Recipe Ingredients

10 oz plain flour
1 oz ground almonds
6 oz butter
3 oz caster sugar
grated rind of ½ lemon (half)
1 egg yolk
3 tablespoons milk

125g marzipan
250 g mincemeat

 

Decoration

75g icing sugar
11/2 tsp warm water  one and a half
100g ready to roll white icing
edible green food colouring
edible red food colouring
(you can also buy ready coloured icing from Supercook or Regalice)

 

Method:

Sift the flour into a mixing bowl and add the ground almonds.  Add the butter, cut into small pieces and rub into the mixture using your fingers.  Add the sugar and lemon rind.  Lightly mix the egg yolk and milk and stir into the dry ingredients. Mix to a fairly firm dough, turn out on to a lightly floured board and knead until smooth.  Chill for 30 minutes before using.

Roll the pastry  out on to a lightly floured work surface and using a plain or fluted cutter stamp out 48 circles of pastry.

Gently press 24 pastry circles into two lightly greased tartlet tins.  Cut the marzipan into 24 small pieces, roll into balls and then flatten them with your hand.  Place a piece of marzipan on the base of each tartlet  and then spoon a teaspoon of mincemeat on top..  Dampen the edges of the pastry and cover each one with a pastry circle top.  Seal the edges and with a sharp knife cut two slits in the top of each.  Place in the centre of an oven pre-heated to 200C and bake for 15 to 20 minutes or until golden.

Once the mince pies are cool, mix together the icing sugar and water and pipe white icing in a zig zag pattern over the mince pies.  Colour four fifths of the ready to roll icing green and the remainder red (or use ready made coloured icing Supercook coloured icing is available in supermarkets).  Cut holly leaves from the green icing (you can buy little cutters that stamp out holly leaves) and roll the red icing into tiny red balls like berries.  Use these to decorate the mini mince pie recipe.
