Veggie Meals - Vegetarian Sausages


Delicious vegetarian sausages that are quick and easy veggie meal to prepare. If you have time you can form the mixture into sausage shapes and then set aside in the fridge to firm up before cooking.

Some teenage girls who start dieting and also choose to become vegetarian, may cut out meat from their diet without replacing it with a suitable plant source of iron. This could cause problems as they are particularly prone to iron deficiency due to the start of their periods. One good way to get iron is to have a bowl of wholegrain or fortified cereal in the morning with a glass of orange juice or include some other vitamin C rich fruits like kiwi or strawberries.

 

Ingredients

175g (6 oz) sliced white bread
25g (1 oz) butter
1 medium onion, finely chopped
175g (6 oz) grated courgette
150g (5 oz) Cheddar cheese, grated
1 egg, separated
a little salt and pepper
vegetable oil for frying

 

Method:

Make the breadcrumbs by tearing the bread into pieces and blitzing it in a food processor. Squeeze the excess liquid out of the courgette.

Heat the butter in a frying pan and fry the onion until soft. Add the grated courgette and cook for 3 minutes until softened.

Mix with the grated cheese, half the breadcrumbs, the egg yolk and seasoning. Shape into 8 sausages about 10 cm (4 in) long, using floured hands. Dip into the lightly beaten egg white and then roll in the remaining breadcrumbs.

Heat some oil in a wok or frying pan and shallow fry the sausages until lightly golden.
