Chicken Caesar Salad

Chicken Caesar Salad

 

 

 

You could also use this Chicken Caesar filling as a filling for a tortilla wrap. Simply leave out the croutons

 

Ingredients

1 thick slice white bread, crusts trimmed and cut into small cubes
1 tbsp olive oil
1 cooked chicken breast
1 baby gem lettuce or 1/2 Cos or romaine lettuce, cut into pieces

1 tbsp grated parmesan cheese

 

Dressing

50ml (2 tbsp) mayonnaise
1 tsp lemon juice
1/2 small clove garlic, crushed (optional)
1/8 tsp Dijon mustard (optional)
a few drops Worcestershire sauce
a few drops Tabasco sauce
1 tbsp grated parmesan cheese

 

 

Method:

Heat the olive oil in a small non-stick frying pan and add the cubes of bread. Fry, turning occasionally until golden brown. Remove with a slotted spoon and drain on kitchen paper. If you prefer you can buy ready-made croutons.

Cut the chicken into bite-sized pieces.

Mix together all of the dressing ingredients. Mix together the lettuce and chicken and toss with most of the dressing (there will probably be some dressing left over-). Scatter over the parmesan and croutons. If you buy a small container it would be nice to pack the dressing separately and let your child dress the salad himself so that it remains nice and crisp.
